This is a great low glycemic snack at the end of the day before I go to bed if I am craving something sweet. It’s my favorite thing while I do some reading at night after I have made my food for the next day. I like to enjoy it with sweetened peppermint tea right before bed.
Preparation time: 5 minutes
2 Tbsp Natural Peanut Butter (I favor the salted, crunchy kind)
2 Tbsp Vanilla Protien Powder
1/2 tsp vanilla
Combine all together, roll into 1 1/2 inch balls. Eat room temperature or chill in refrigerator one hour.
